kontrolisanu dostavu bioaktivnih komponenti, polazeći od frakcije
vodorastvornih polifenola majčine dušice (Thymus serpyllum L.) i njihove
inkapsulacije u hidrogelove na bazi hitozana. Najpre je vršena karakterizacija
polaznog ekstrakta majčine dušice, određivanjem ukupnog sadržaja polifenola
(spektrofotomerijom u ultraljubičastoj oblasti), zatim određivanjem konkretnih
polifenolnih jedinjenja prisutnih u ekstraktu (tečnom hromatografijom pod
visokim pritiskom), kao i određivanjem sadržaja minerala (metodom
indukovano spregnute plazme sa masenom spektrometrijom). Na kraju,
procenjen je antioksidativni kapacitet ekstrakta korišćenjem
spektrofotometrijske metode (ABTS)...</ns1:description>
    <ns1:description language="en">Presented thesis addresses the bottom-up approach in design of functional
food ingredients starting with aqueous thyme (Thymus serpyllum L.) extract and
its encapsulation within the chitosan-based hydrogels. Firstly, characterization
of thyme extract was performed, in terms of determining total phenolic content
(ultraviolet-visible spectrophotometry), particular polyphenolic compounds
(high pressure liquid chromatography), as well as mineral content (inductively
coupled plasma with mass spectroscopy). Finally, the antioxidant capacity of
